Two Things I Love: Biscoff Pudding and Knitting!

I’m sitting here this morning with my Tall Dark and Handsome cup of Joe and my serenity prayer reminder in the background, ready to start my day with blog writing. I’m not an alcoholic but the serenity prayer used in AA is a good prayer for ANYONE. I like the extended version:
“God, grant me the serenity to accept the things I cannot change, the courage to change the things I can, and the wisdom to know the difference. Grant me patience with the changes that take time, appreciation for all that I have, tolerance of those with different struggles, and the strength to get up and try again, one day at a time.”
I mean, really, how can you not get something out of that??? I consider myself spiritual, not religious, so I often replace “God” with “Universe” or “Higher power”. (Scroll down to read more of the blog….)

On to something YUMMY besides coffee…. I call it Biscoff Pudding. It’s probably called something else, but I didn’t Google it. I saw it on an Emmymade Facebook video. Ok, so I can’t find it now, but when I searched, there are 8 million (approx) other videos. I love Emmymade though – check her out.

It’s so easy. Just stuff as many Biscoff biscuits as you can into your yogurt container. I used the single serve size of Siggi’s and got 4 biscuits in there.






The yogurt will start coming up over the edge but that’s ok, just use it to cover that last biscuit on top.
Cover with plastic wrap and stick in the fridge for several hours to give the biscuits time to soften. Mine was in there overnight.

Here it is in front of my favorite Synergy kombucha! (And next to my crock pot stew that I made yesterday – it was good but a little too salty because I used a tablespoon instead of a teaspoon to measure my beef Better Than Bouillon. Duh. I’m working on mediating that in some way today. Maybe removing some of the gravy and adding water….??)


In the morning, I took it out and had it for breakfast with my morning coffee and beetroot capsules that are supposed to be good for inflammation (#fibromyalgia). This is SO YUMMY. All the videos showed it with plain yogurt which I forgot about. I used vanilla. SO. GOOD. Try it and let me know what you think!
On to KNITTING! I have taught several classes lately at The Spinning Room yarn shop. I’m not quite in my “blogging everything” groove so I forgot to take a group project picture at the end of the classes. I asked my students to send me pictures from home.
First up is the My Jose Hood (click there to see the pattern pictures on Ravelry). This class started in early January and ended at the end of February. It’s a project that takes a lot of time and results in a big, cozy hood/scarf:



Next up is the Buttress brioche hat. Brioche is a rather complicated knitting technique. This two-session class resulted in some great progress by the students in learning it with two colors:





This weekend is the Fair+Square Washcloth/dishcloth class!….

I’m off to cook chicken to make dog food for Moose. That’s a whole other blog post….

Otters are my favorite animal of all time. They hold hands when they sleep so they won’t lose each other. They have a little pocket in their fur where they keep their favorite rock for cracking open clams. How adorable is that????
